Current Needs
Our remaining needs are much fewer than they were a few months ago. We think we need a dough sheeter/moulder, a crepe maker, a point-of-sale system (fancy cash registers), and a bunch of pretty pictures for the walls of the restaurant. That's what we think. It remains to be seen exactly what God thinks on these items. Adaptability is a great thing! So far, the only things in the restaurant building that are actually brand new are the flat screen TV on the wall of the restaurant (think nature videos), the custom-cut glass for the front counter and salad bars, and the bathroom fixtures. Everything else has either been refurbished or built from scratch. One purchase of second hand equipment that cost us $2160 was valued by an experienced restaurant professional as being worth anywhere from $30,000 to $60,000.
Out at the farm/health center, the house is finished and we have a husband and wife team (Clint and Laura Lee Pier) on site. He is an experienced organic gardener who specializes in year-round, intensive, low-energy, greenhouse/shadehouse production, and she is a licensed massage therapist with several years experience in health reconditioning work. One greenhouse is up, and water lines are nearly all installed for future development covering about eight acres. Future plans call for construction of another, larger home that will include housing for additional staff and guests, as well as some simple treatment facilities.
One thing we certainly need is more Bible workers. We have one full time volunteer (May her tribe increase!) who seems to be a perfect fit for helping lead and train a whole group of idealistic young volunteers (yet to arrive on site). Her name is Veronica Jenkins, a 40-something product of Ouachita Hills College who spent the last two years as a Bible worker for the college's church plant in Arkadelphia. We are currently looking (and praying) for a just-out-of-the-city outpost center with lots of bedrooms and bathrooms so we can house a full team of workers.
